A batch of three white varieties from Dão, each with its own personality! Encruzado, the majority, provides volume and complexity, as well as the freshness associated with its more vegetal aromatic component, while Gouveio reinforces this freshness and decisively contributes to harmonizing the aftertaste and its persistence. Bical unites all these attributes, thus reinforcing the great delicacy of the set, where the subtle notes of the oak wood in which it aged are very well integrated.
Aged for about 18 months in new (80%) and used (20%) French oak barrels.
Manual harvest for 15 kg boxes. Separate vinification of the different varieties
Manual selection on choice mat. After destemming and crushing, the resulting masses were sent to a pneumatic press where the must from the films was separated, the must being subjected to static decantation at low temperature for 48 hours for clarification. It fermented in stainless steel vats at controlled temperature.
